Welcome back to Kaya’s Kitchen! Now I’m sure you read the title and said, “What?!”
This surprise meatloaf contains a gooey center filled with cheese and bacon.
You will need: 2 lb of ground beef, 1/2 cup of white onion diced, 1 cup of dried bread crumbs, 1/2 cup of milk, 1 large egg, 2 tablespoons of Worcestershire sauce, 1 teaspoon salt, 1 teaspoon basil, 1 teaspoon oregano, 1/2 teaspoon of pepper, 1 teaspoon crushed red pepper flakes, 3/4 cup shredded cheese, 1/2 cup crushed cooked bacon
For the glaze: 1 tablespoon of Worcestershire sauce, 1/2 cup of ketchup, 2 tablespoons brown sugar
Preheat oven to 350 degrees and grease your pan. (9×13 preferably)
In a large mixing bowl, knead the ground beef, onion, milk, egg, bread crumbs, salt, basil, worcestershire sauce, pepper, oregano, and red pepper flakes.
This is where it gets tricky, you want to split the meatloaf into 2. One 3/4 and the other 1/4.
Take the smaller portion and flatten it out into the shape of the meatloaf. With the larger portion, make an inground swimming pool. Make the outsides at least 1 1/2 inches in width.
Put the bacon and shredded cheese in the swimming pool.
Take the smaller, flatter portion, and cover up the cheese and bacon, creating the top of the meatloaf.
After the meatloaf is shaped, place it into the prepared pan, and bake it for 40 minutes.
In a small bowl, whisk the ketchup, brown sugar, and worcestershire sauce. Brush this glaze over the hot meatloaf.
Increase the temperature of the oven to 400 degrees and bake until the meatloaf reaches an internal temperature of 160 degrees, usually another 10 minutes. (In order to check the internal temperature, you have to check the outside of the meatloaf, because you don’t want to pierce the gooey center.)
After taking the meatloaf out, let it cool for 5 minutes before serving.
